Calamari wrap with tzatziki sauce

Ingredients
  

  • 3 cups of fresh baby spinach
  • 4 large sized tortillas
  • 3 cups of calamari rings
  • 1 cup of chopped cherry tomatoes
  • 1 tablespoon of olive oil

Garlic tzatziki sauce

  • 1 cup of greek yogurt
  • 2 tablespoons of ricotta
  • 1 teaspoon of garlic powder
  • 1-2 sprigs of chopped up fresh dill
  • 1 teaspoon of paprika
  • 1 tablespoon of lemon juice
  • pinch of salt and pepper

Instructions
 

  • Warm a large skillet or wok to medium temperature. Cook the calamari for 5 minutes in the olive oil with a pinch of salt. (If using frozen, cook for 5-10 minutes longer until golden brown.)
  • Add the chopped cherry tomatoes into the skillet with the calamari for 1-2 minutes.
  • In a bowl, mix the greek yogurt in with the salt, pepper, garlic, paprika, dill, and lemon juice to make the tzatziki sauce.
  • Once the calamari and cherry tomatoes are cooked, take them off the stove.
  • On a fry pan, lightly heat the each tortilla for 1-2 minutes before placing flat on a plate.
  • Spread some of the garlic tzatziki sauce across the wrap, and then top off with some spinach, calamari and chopped tomatoes.
  • Close the wrap and serve warm.

Notes

This recipe counts 1 wrap per person, but you can adjust quantities as you wish.
