Ingredients

  • 500 g of steak cut into small cubes (1lb)
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of dried parsley
  • pinch of salt and pepper
  • 1 tablespoon of vegetable, avocado or sunflower oil

Coconut peanut sauce

  • 2 tablespoons of soy sauce
  • 1 cup of coconut milk
  • 4 tablespoons of peanut butter
  • 1 teaspoon of brown sugar
  • 1 tablespoon of lemon juice
  • Pinch of garlic powder
  • Pinch of salt and pepper
  • 1/2 teaspoon of red pepper flakes (optional)

Instructions

  • Cut the steak into small bite size pieces.
  • Place the steak in a bowl and cover with the spices and parsley.
  • In a small sauce pan, at medium heat, combine all the ingredients except the lemon juice.
  • Mix the sauce gently with a whisk or a wooden spoon for about 5 minutes until it blends together.
  • Take the peanut sauce off the stove, and mix in the lemon juice.
  • Preheat the air fryer for 5 minutes at 375°F (190°C).
  • Spray the air frybasket with some vegetable oil.
  • Place the steak bites in the air fryer basket for 4 minutes, shaking and rotating them every 2 minutes or so. (Don't overcrowd the basket, lay the steak bites in a single layer).*
  • Open the air fryer to see if they are cooked enough for you, and heat them for a couple more minutes if you wish.
  • Serve while warm.

Notes

* Adjust the timing of the air fryer depending on how you want your steak cooked.
  • If you want medium-rare, cook for 2 minutes.
  • For medium, cook for 3 minutes.
  • For medium-well, cook for 4 minutes.
  • For well done, cook for 5 minutes
