Base Ingredients
- 2 cups of flour
- 2 cups of grated cheese eg. gruyère, emmental or feta
- 2 eggs
- 1/2 cup of milk
- 1/4 cup of olive oil
- 1.5 sachets of baking powder (1 tablespoon)
- pinch of salt and pepper
- 1/4 cup butter
- 1 tablespoon of dried coriander
Preheat the oven to 180C (350F).
Melt the butter in a large bowl in the microwave.
Blend in the milk and eggs with a mixer into the bowl.
Add flour, salt, pepper, and baking powder and mix it all together into a smooth and creamy texture.
Stir in the ingredients along with the cheese and olive oil to the mixture.
Grease the muffin baking tray with some olive oil or butter, so that the cake does not stick.
Transfer the mixture to the baking tray and put in the oven for 45 minutes at 180C (350F) until the top is lightly browned.
Serve slightly warm or at room temperature.
