Main ingredients:

FlourFlour – all-purpose flour or whole wheat flour.
MilkMilk – add some airiness to the cake.
cheddarGrated cheese – any sort of hard cheese will do such as gruyère, parmesan, cheddar, emmental, etc

Spices and flavoring herbs:

OilOlive oil – for flavor
Coriander CilantroFresh coriander (cilantro)
ButterButter
baking powderBaking powder – this is leavening agent. You may not need it if you are using self-rising flour.
cayenne pepper(Optional) Pinch of piment d’espelette or cayenne pepper
Salt and pepperSalt and pepper

Ingredients
  

Base Ingredients

  • 2 cups of flour
  • 2 cups of grated cheese eg. gruyère, emmental or feta
  • 2 eggs
  • 1/2 cup of milk
  • 1/4 cup of olive oil
  • 1.5 sachets of baking powder (1 tablespoon)
  • pinch of salt and pepper
  • 1/4 cup butter
  • 1 tablespoon of dried coriander

Instructions
 

  • Preheat the oven to 180C (350F).
  • Melt the butter in a large bowl in the microwave.
  • Blend in the milk and eggs with a mixer into the bowl.
  • Add flour, salt, pepper, and baking powder and mix it all together into a smooth and creamy texture.
  • Stir in the ingredients along with the cheese and olive oil to the mixture.
  • Grease the muffin baking tray with some olive oil or butter, so that the cake does not stick.
  • Transfer the mixture to the baking tray and put in the oven for 45 minutes at 180C (350F) until the top is lightly browned.
  • Serve slightly warm or at room temperature.

How to store it?

Let the cheese muffins cool before you place them in an airtight container designed for the freezer, and you should be good to go, for about a month or so.

When ready to eat, thaw the cheese muffins in a refrigerator overnight and bake at 350ºF (175°C) for about 20 minutes until warm.
