Base Ingredients
- 2 cups of flour
- 2 cups of grated cheese eg. gruyère, emmental or feta
- 2 eggs
- 1/2 cup of milk
- 1/4 cup of olive oil
- 1.5 sachets of baking powder (1 tablespoon)
- pinch of salt and pepper
- 1/4 cup butter
- 1 tablespoon of dried coriander
Instructions
- Preheat the oven to 180C (350F).
- Melt the butter in a large bowl in the microwave.
- Blend in the milk and eggs with a mixer into the bowl.
- Add flour, salt, pepper, and baking powder and mix it all together into a smooth and creamy texture.
- Stir in the ingredients along with the cheese and olive oil to the mixture.
- Grease the muffin baking tray with some olive oil or butter, so that the cake does not stick.
- Transfer the mixture to the baking tray and put in the oven for 45 minutes at 180C (350F) until the top is lightly browned.
- Serve slightly warm or at room temperature.
