Mix all the ingredients for the greek yogurt sauce in a bowl with a large spoon or whisk.
Cut the puff pastry base into 4 equal strips.
Using a soft brush, paint the filo pastry with oil on one side.
On the 1st strip, place half a teaspoon of sauce along with a coin-size of goat cheese in the bottom right hand corner.
Fold the corner to the left to form a triangle.
Fold the triangle again to the right.
Repeat a couple more times.
Use your fingers to fold the remaining filo pastry into the triangle.
Repeat using the remaining filo pastry strips.
Preheat your oven at 410°F (210°C) for 5 minutes.
Place all the samosa triangles in a baking dish and cook in the oven for around 10 minutes.
Check to see if the samosas are crispy enough for you.
Remove from oven and serve while warm.
