These vegetarian samosas combine goat cheese and greek yogurt for a tangy and tasty dish everyone will love.

Ingredients
  

  • 2 large filo puff pastry bases
  • 1.5 cups of goat cheese (400g)
  • 1/2 cup of vegetable oil

Greek yogurt sauce

  • 1 cup of greek yogurt
  • 1/2 teaspoon of garlic flakes
  • 1/2 teaspoon of shallot flakes
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of dried parsley
  • 1/2 teaspoon of paprika
  • pinch of salt and pepper

Instructions
 

  • Mix all the ingredients for the greek yogurt sauce in a bowl with a large spoon or whisk.
  • Cut the puff pastry base into 4 equal strips.
  • Using a soft brush, paint the filo pastry with oil on one side.
  • On the 1st strip, place half a teaspoon of sauce along with a coin-size of goat cheese in the bottom right hand corner.
  • Fold the corner to the left to form a triangle.
  • Fold the triangle again to the right.
  • Repeat a couple more times.
  • Use your fingers to fold the remaining filo pastry into the triangle.
  • Repeat using the remaining filo pastry strips.
  • Preheat your oven at 410°F (210°C) for 5 minutes.
  • Place all the samosa triangles in a baking dish and cook in the oven for around 10 minutes.
  • Check to see if the samosas are crispy enough for you.
  • Remove from oven and serve while warm.
