Instant Pot Orange chicken with broccoli

- 3 pounds of boneless chicken approx. 5-6 pieces
- 2 cups of fresh broccoli
- 2 tablespoons soy sauce
- 1 teaspoon of orange zest
- 1/2 cup of orange juice unsweetened
- 1 cup of chicken stock
- 2 tablespoons of olive oil
- 2 teaspoons of minced garlic
- 1 teaspoon of dried parsley
- 1 teaspoon of ground ginger
- 1 teaspoon of brown sugar
- pinch of salt and pepper to taste
- 1 tablespoon of sriracha (optional)
Slurry
- 1 tablespoon of cornstarch
- 1 tablespoon of water
Add the olive oil, garlic, chicken and ginger into the instant pot and sauté for a couple of minutes until fragrant.
In a small bowl, mix the cornstarch and the water completely to make a slurry.
Add the rest of the ingredients (except the broccoli and slurry), and set the Instant Pot to High Pressure for 14 minutes.
Once the countdown has finished, let the pressure release naturally for 10 minutes.
Open the Instant pot and stir in the slurry and the broccoli.
Press the Sauté button again for 5 minutes to let the sauce thicken.
Let the orange chicken rest for 10 minutes on the Keep Warm function.
Taste to add salt and pepper if necessary.
Serve while warm.
