Lemon Garlic Scallops in Pasta (Instant pot)

- 1 lb frozen scallops
- 1 lb of farfelle wholewheat pasta (500g)
- 2 teaspoons of garlic flakes
- 1 teaspoon of shallot flakes
- 1/2 teaspoon of paprika
- 1 lemon, juiced
- 1 tablespoon of butter
- 4 sprigs of fresh parsley
- 2 tablespoons of crème fraiche or heavy cream
- pinch of kosher salt and black pepper
- 1/2 cup of shredded gruyère or emmental cheese
Place the pasta at the bottom of the instant pot.
Add 4 cups water or until the pasta is completely covered.
Place the scallops into the pot.
Squeeze the juice out of the lemon and put the juice in the Instant pot.
Add the rest of the ingredients (except for the cheese and cream) to the Instant pot.
Set Instant pot on Manual High for 2 minutes.
Once the Instant pot has finished, quick release the steam.
Stir the pasta and add in the heavy cream while using the Sauté button for 5 minutes.
Let pasta rest for 5 minutes.
Top with a handful of shredded cheese.
Serve while warm.
