- 25-30 large raw shrimp peeled and deveined, with or without with tail-on
- 2/3 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon of salt
- 10 cl very cold sparkling water eg perrier
- 1 raw egg
- 1 l vegetable oil Peanut, avocado, or canola oil
In a bowl, combine the egg, sparkling water and salt.
Add the flour and cornstarch, stirring with a whisk. The mixture should be very smooth.
Heat the oil in a deep fry casserole or deep fryer.
Mix the shrimp in the batter, and then gently lower them into the frying oil.
Cook for about 3 minutes, or until they turn a nice golden color.
Remove from the fryer and place on paper towels on a plate.
Serve while warm.
