Main ingredients:

lambLamb – fresh cuts of lamb. Boneless lamb works best, but you can also use boned lamb chops.
OnionChopped or sliced white onion is preferable.
CarrotChopped fresh or frozen carrots
tomato coulisTomato sauce or tomato paste

Ingredients
  

  • 1 kg of lamb shank cut into medium-sized portions
  • 1 onion chopped up
  • 1 carrot sliced
  • 1 cup (Optional) of sliced white or button mushrooms
  • 2 tablespoons of flour
  • 1 cup tomato sauce or 1/2 cup tomato paste

Herbs & spices

  • 1 teaspoon garlic powder
  • 4 sprigs of parsley
  • 4 sprigs of thyme
  • 2 cubes of beef stock bouillon mixed into 2 cups of water.
  • 2 tablespoons of apple cider vinegar
  • 1/4 cup abricot, peach or pear juice
  • Salt and pepper to taste

Instructions
 

  • Add the ingredients (except the flour), and set the Instant Pot to High Pressure for 1 hour.
  • Once the countdown has finished, let the pressure release naturally for 10 minutes.
  • Mix in the flour with a tablespoon of water to make a slurry. Add the slurry to the Instant Pot.
  • Press the Sautรฉ button again for 5 minutes to let the sauce thicken.
  • Let the lamb stew rest for 10 minutes on the Keep Warm function.
  • Taste to add salt and pepper if necessary.
  • Serve while warm.
