An easy recipe for strawberries and cream when you want dessert quickly.

Ingredients
  

  • 1 lb fresh strawberries (16 oz)
  • 6-8 biscuits or cookies
  • 2 tablespoons of sugar granulated or brown
  • 1 cup of heavy cream
  • 3 tablespoons of powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 fresh peppermint or mint leaves for decoration (optional)

Instructions
 

  • Wash, hull and chop the strawberries into quarters and place them in a large bowl.
  • Add the granulated or brown sugar to the bowl and mix. Let it sit for 10-15 minutes to melt.
  • In a 2nd bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with a hand mixer or electric mixer for a couple of minutes until stiff.
  • Break the biscuits by hand or with a rolling pin, and place them at the bottom of each serving cup.
  • Add the strawberries and cream to each serving cup, alternating as you go.
  • (Optional) Garnish with fresh mint or peppermint leaves.
  • Serve immediately, or place in fridge until ready to serve.

  • amaretti biscuits
  • shortbread cookies
  • gingerbread cookies
  • butter cookies
  • biscotti
  • granola
  • sugar cookies
  • graham crackers 
  • galettes breton (biscuits)
