Instructions
Wash, hull and chop the strawberries into quarters and place them in a large bowl.
Add the granulated or brown sugar to the bowl and mix. Let it sit for 10-15 minutes to melt.
In a 2nd bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with a hand mixer or electric mixer for a couple of minutes until stiff.
Break the biscuits by hand or with a rolling pin, and place them at the bottom of each serving cup.
Add the strawberries and cream to each serving cup, alternating as you go.
(Optional) Garnish with fresh mint or peppermint leaves.
Serve immediately, or place in fridge until ready to serve.
