Now the best strawberries are the ones that are in season, so if you are living in the Northern Hemisphere, that means summer strawberries which are at their peak in June and July. But if you can manage to find fresh strawberries at other times of the year, I’m sure no one is going to turn down this delectable dish!

You can use any types of cookies you want, you are just looking for a bit of crunch. Some interesting types of cookies and biscuits that will go well with the strawberries are:
- amaretti biscuits
- shortbread cookies

- almond macaroons
- sugar cookies
- graham crackers
- galettes breton (biscuits)
I confess I don’t really love chocolate chip cookies or peanut butter cookies in this dessert because it tends to compete with the freshness and tanginess of the strawberries but if you enjoy it, feel free to use it!
What to serve with it?
Strawberries and cream dessert can be served by itself, but you can also top it with whipped cream. You can also serve it with a small digestif at the end of a large meal like brandy or cognac.
How to store it?
If you want to make this in advance, I recommend preparing the strawberries, biscuits, and cream separately, and then assembling it when you want to serve it. The cream will make the biscuits mushy and the strawberries will turn the cream pink, so it won’t have quite the same visual effect.

Strawberries and cream dessert
An easy recipe for strawberries and cream when you want dessert quickly.
Ingredients
- 1 lb (or 16 oz) fresh strawberries
- 6-8 biscuits or cookies
- 2 tablespoons of sugar (granulated or brown)
- 1 cup of heavy cream
- 3 tablespoons of powdered sugar
- 1/2 teaspoon vanilla extract
- (Optional) fresh peppermint or mint leaves for decoration
Instructions
- Wash, hull and chop the strawberries into quarters and place them in a large bowl.
- Add the granulated or brown sugar to the bowl and mix. Let it sit for 10-15 minutes to melt.
- In a 2nd bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with a hand mixer or electric mixer for a couple of minutes until stiff.
- Break the biscuits by hand or with a rolling pin, and place them at the bottom of each serving cup.
- Add the strawberries and cream to each serving cup, alternating as you go.
- (Optional) Garnish with fresh mint or peppermint leaves.
- Serve immediately, or place in fridge until ready to serve.
