Main ingredients:

EggEggs – medium-sized eggs
hamChopped ham or bacon*
CauliflowerCauliflower – fresh or frozen cauliflower, chopped into florets.
cheeseGrated cheese – cheddar, gruyรจre, mozzarella, or emmental cheese.
CreamHeavy cream – plain heavy cream or crรจme fraiche

Spices, herbs and ingredients for flavor:

Garlic powderGarlic – crushed garlic powder or flakes
ParsleyParley – fresh or dried parsley
Onion powderOnion powder – onion powder for seasoning
nutmegNutmeg – pinch of freshly grated nutmeg for flavor

For a quick and healthy breakfast there is nothing like a cauliflower breakfast casserole. This wholesome dish combines the goodness of cauliflower with the classic breakfast trio of eggs, ham, and cheese.

It is a dish that you can easily prepare in advance and dish up in the morning. The cauliflower serves as the perfect base, providing plenty of protein to keep you feeling satisfied until lunchtime.

The ham adds a savory note, while the golden melted cheese brings a delightful creaminess. And then you have the eggs to bind everything together and add even more protein and healthy goodness to this dish.

Cooking tips

Ingredients
  

  • 3 cups of chopped cauliflower florets
  • 6-7 medium-sized eggs
  • 1 cup of chopped bacon
  • 1/2 cup of shredded cheese eg. cheddar, gruyere, emmental, etc.
  • 1 cup of heavy cream or crรจme fraiche

Spices

  • 1 teaspoon of garlic powder
  • 1 teaspoon of grated nutmeg
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried parsley
  • pinch of salt and pepper to taste

Instructions
 

  • Chop the ham into small slices and the cauliflower into small florets.
  • Preheat the oven to 360ยฐF (180ยฐC).
  • In a large casserole dish, add the cauliflower and place in the oven for about 30 minutes.
  • In a large bowl, crack open all the eggs and mix with the heavy cream and shredded cheese.

  • Add the spices and the ham into the egg mixture.

  • Take the tray carefully out of the oven, and add in the egg mixture on top.

  • Place the casserole dish back in the oven and cook for another 20 minutes or until the egg and cheese looks melted.

  • Serve while warm.

Notes

* If using bacon instead of ham, be sure to cook the bacon in advance.

What to serve with it?

This delicious cauliflower egg casserole can be served by itself, but you can also serve it for breakfast with a snack like these smoked salmon taquitos or these ham and spinach egg muffins.
You can also serve it as a side dish for lunch or dinner with a main like Air fryer lamb shoulder roast.

How to store it?

You can easily prepare this cauliflower breakfast casserole in advance, and even keep it overnight in the fridge. Keep it in airtight glass containers in the fridge, and take it the next day for a packed lunch.
I wouldn’t recommend freezing it however, as the egg and cream may not do well in the freezer.
