An easy recipe for Instant Pot seafood paella that makes for a delicious weeknight meal.

Ingredients
  

  • 2 cups of frozen seafood eg. shrimp, prawns, mussels, calamari rings, scallops
  • 2 chopped large tomatoes or 1 can of whole-peeled tomatoes
  • 1 chopped medium onion
  • 1/2 chopped red pepper
  • 1/2 chopped green pepper
  • 1 cup frozen green peas
  • 1 teaspoon of turmeric or saffron
  • 1 tablespoon of paprika
  • 4 cloves of crushed garlic
  • 1 tablespoon of olive oil
  • 4 cups of paella bomba rice or arborio rice
  • 5 cups of chicken stock
  • Pinch of salt and pepper
  • 1 teaspoon of cayenne pepper (optional)
  • 1 chopped chorizo sausage (optional)

Instructions
 

  • Chop the onions, peppers, and tomatoes.
  • Add the olive oil to the Instant pot and add the chopped onions, chorizo, and crushed garlic.
  • Sauté for a couple of minutes till fragrant.
  • Add the rest of the ingredients and close the Instant pot.
  • Cook on Manual for 5 minutes.
  • After the Instant Pot timer ends, quick release the steam.
  • Stir the paella and serve while warm.

Notes

If you like spicy, add more cayenne pepper or chili peppers to up the heat factor, if you wish.
