A tangy spinach caesar salad that makes a wonderful healthy starter or side dish.

Ingredients
  

  • 3 cups of fresh spinach
  • 1 cup of croutons
  • 2 tablespoons of shaved parmesan cheese
  • 4 anchovies fillets finely chopped (optional)

Dressing

  • 1 cup of greek yogurt
  • 1 tablespoon of dijon mustard
  • 1 teaspoon of garlic powder
  • 1 tablespoon of lemon juice
  • 1 tablespoon of olive oil
  • pinch of salt and pepper

Instructions
 

  • Mix all the ingredients for the dressing in a bowl with a large spoon or whisk.
  • Wash the spinach and remove any excess water.
  • Place the spinach in a large salad bowl and add the caesar dressing.
  • Toss the salad, along with the parmesan, croutons, and optional anchovies.
  • Serve immediately.

Notes

If you intend to make this caesar salad dressing in advance, keep it in the fridge until ready to serve.
