The dressing is a creamy caesar dressing, made without raw egg, because which if you like, you can make in a big batch in advance and then keep it in the fridge.
I also made my own seasoned croutons since I had my air fryer handy, but you can easily used a store-bought version if that is what you prefer.

This spinach caesar salad is a great healthy salad that can be served as the vegetable side dish with something like salmon in lemon butter sauce or a ratatouille with goat cheese. You can also serve it along side a dish like ham and egg pizza.
How to store it?
You can prepare this spinach caesar salad a few hours in advance, but just keep the dressing separately to keep the spinach from wilting.
Keep them separate in the fridge, and when ready to serve remove both from the fridge about 20 minutes in advance so that they get to room temperature. Then add the caesar dressing onto the salad a few minutes before you are ready to serve.

A tangy spinach caesar salad that makes a wonderful healthy starter or side dish.
Ingredients
- 3 cups of fresh spinach
- 1 cup of croutons
- 2 tablespoons of shaved parmesan cheese
- (Optional) 4 anchovies fillets finely chopped
Dressing
- 1 cup of greek yogurt
- 1 tablespoon of dijon mustard
- 1 teaspoon of garlic powder
- 1 tablespoon of lemon juice
- 1 tablespoon of olive oil
- pinch of salt and pepper
Instructions
- Mix all the ingredients for the dressing in a bowl with a large spoon or whisk.
- Wash the spinach and remove any excess water.
- Place the spinach in a large salad bowl and add the caesar dressing.
- Toss the salad, along with the parmesan, croutons, and optional anchovies.
- Serve immediately.
Notes
If you intend to make this caesar salad dressing in advance, keep it in the fridge until ready to serve.
