This spinach salad with a homemade creamy caesar dressing is a perfect way to enjoy your veggies at lunch or dinner.

Ingredients

Spinach3 cups of fresh spinach or baby spinach
baguette1 cup of croutons – homemade croutons or store-bought
cheese2 tablespoons of shaved parmesan cheese
fish(Optional) 4 anchovies fillets finely chopped for that traditional touch. You can also use bacon bits as an alternative.

Dressing ingredients:

Cream1 cup of regular or low fat greek yogurt.
Garlic powder1 teaspoon of garlic powder or flakes
Dijon mustard1 tablespoon of Dijon mustard
Oil1 tablespoon of olive oil
lemon1 tablespoon of freshly squeezed lemon juice for flavor

How to make this spinach caesar salad

  1. Whisk all the dressing ingredients together in a bowl until smooth and well combined.
  2. Wash the spinach thoroughly and pat dry to remove excess water.
  3. Place the spinach in a large salad bowl and pour the dressing over the top.
  4. Toss well to coat evenly.
  5. Add the parmesan, croutons, and optional anchovies, and toss lightly again.
  6. Serve when ready.

The dressing is a creamy caesar dressing, made without raw egg, because which if you like, you can make in a big batch in advance and then keep it in the fridge.

I also made my own seasoned croutons since I had my air fryer handy, but you can easily used a store-bought version if that is what you prefer.

Ingredients

Instructions

  • Toss the salad, along with the parmesan, croutons, and optional anchovies.
  • Serve immediately.

What to serve with it?

This spinach caesar salad is a great healthy salad that can be served as the vegetable side dish with something like salmon in lemon butter sauce or a ratatouille with goat cheese. You can also serve it along side a dish like ham and egg pizza.

How to store it?

You can prepare this spinach caesar salad a few hours in advance, but just keep the dressing separately to keep the spinach from wilting.

Keep them separate in the fridge, and when ready to serve remove both from the fridge about 20 minutes in advance so that they get to room temperature. Then add the caesar dressing onto the salad a few minutes before you are ready to serve.
