Spinach Caesar salad
This spinach salad with a homemade creamy caesar dressing is a perfect way to enjoy your veggies at lunch or dinner.
Ingredients
![]() | 3 cups of fresh spinach or baby spinach |
![]() | 1 cup of croutons – homemade croutons or store-bought |
![]() | 2 tablespoons of shaved parmesan cheese |
![]() | (Optional) 4 anchovies fillets finely chopped for that traditional touch. You can also use bacon bits as an alternative. |
Dressing ingredients:
![]() | 1 cup of regular or low fat greek yogurt. |
![]() | 1 teaspoon of garlic powder or flakes |
![]() | 1 tablespoon of Dijon mustard |
![]() | 1 tablespoon of olive oil |
![]() | 1 tablespoon of freshly squeezed lemon juice for flavor |
How to make this spinach caesar salad
- Whisk all the dressing ingredients together in a bowl until smooth and well combined.
- Wash the spinach thoroughly and pat dry to remove excess water.
- Place the spinach in a large salad bowl and pour the dressing over the top.
- Toss well to coat evenly.
- Add the parmesan, croutons, and optional anchovies, and toss lightly again.
- Serve when ready.

Ingredients

How to store it?
You can prepare this spinach caesar salad a few hours in advance, but just keep the dressing separately to keep the spinach from wilting.
Keep them separate in the fridge, and when ready to serve remove both from the fridge about 20 minutes in advance so that they get to room temperature. Then add the caesar dressing onto the salad a few minutes before you are ready to serve.
