Why we love it
In the world of healthy, nutritious and delicious leafy greens, there is nothing like a dose of spinach. If you are looking to fit more veggies into your diet, this spinach caesar salad recipe is a must-try.
With a milder flavor than kale, this spinach caesar salad is an easy and side dish for any occasion, or can eaten on its own for a light lunch.
The dressing is a creamy caesar dressing, made without raw egg, because which if you like, you can make in a big batch in advance and then keep it in the fridge.
What to serve with it?
This spinach caesar salad is a great healthy salad that can be served as the vegetable side dish with something like salmon in lemon butter sauce or a ratatouille with goat cheese. You can also serve it along side a dish like ham and egg pizza.
How to store it?
You can prepare this spinach caesar salad a few hours in advance, but just keep the dressing separately to keep the spinach from wilting.
Keep them separate in the fridge, and when ready to serve remove both from the fridge about 20 minutes in advance so that they get to room temperature. Then add the caesar dressing onto the salad a few minutes before you are ready to serve.
