Ingredients

apple1 Red apple – I recommend red apples (rather than green) as they are slightly sweeter and less citrusy
Spinach5 oz bag of mixed greens – you can use any sort of mixed greens like arugula, mâche, frisée, chicory, romain lettuce, baby spinach, etc.
red onion1/2 red onion
walnuts(Optional) 2 tablespoons of crushed walnuts

For the dressing:

vinegar2 tablespoons of balsamic vinegar
Oil1 tablespoon of olive oil
feta cheese200 g (3/4 cup) of feta cheese
Salt and pepperPinch of salt and pepper
cayenne pepper(Optional) 1 teaspoon of cayenne pepper – to add a bit of zing to the juices from the apple

How to make this apple feta salad

  1. Whisk together the olive oil, balsamic vinegar, optional cayenne, salt, and pepper in a small bowl to make the dressing.
  2. Chop the feta, red onion, and apples into small, even pieces.
  3. Add the mixed greens to a large salad bowl, then top with the chopped ingredients.
  4. Pour the dressing over the salad.
  5. Toss well to coat everything evenly.
  6. Serve immediately.

Ingredients
  

  • 5 oz bag of mixed greens
  • 1 red apple
  • 200 g of feta cheese (3/4 cup)
  • 1/2 red onion
  • pinch of salt and pepper
  • 2 tablespoons of walnuts (optional)

Salad dressing

Instructions

What to serve with it?

How to store it?

You can prepare the apple feta salad and the balsamic vinaigrette a few hours in advance, but don’t add the dressing into the salad. The salad will become heavy and wilt with the dressing on top, so it is best to keep them separately.

Keep them separate in the fridge, and when ready to serve remove both from the fridge about 20 minutes in advance so that they get to room temperature. Then add the balsamic dressing onto the salad a few minutes before you are ready to serve.
