I’m using crinkle cut potatoes here, but you can just cut them with a knife or use a slicer.

Simple to prepare and bursting with flavor, these potatoes go wonderfully with everything from roasted meats to fresh salads. Or even on their own as a snack!

Notes

If in a hurry, you can lightly boil the potatoes the night before to cut down the cooking time in the oven. You can also prepare it in the Instant pot for 8 minutes high pressure with quick release, peel them and then put them overnight in the fridge.
The next day, slice the potatoes, add the parmesan cheese and put in preheated oven for 20 minutes. (Precook the bacon if you are adding it to the recipe.)

What to serve with it?

Baked parmesan potatoes make an excellent side dish with a piece of meat like a filet mignon or breaded chicken. You can also serve it at a main dish with a side of vegetables like steamed green beans or a starter of roasted tomatoes.

How to store it?

If you with to freeze baked parmesan potatoes, I recommend undercooking them slightly. Let them cool, and then place in an air-tight container in the freezer. When you are ready to eat them, place them back on the stove and finish cooking.
