For a hearty meal full of flavor, try this shakshuka with minced meat recipe. It takes a traditional shakshuka of eggs poached in a spiced tomato sauce to the next level by adding minced meat.

  • Any type of tomatoes that you have on hand will do such as: roma tomatoes, plum tomatoes, beefsteak tomatoes, or even cherry tomatoes.

Ingredients
  

  • 4-8 red tomatoes depending on size
  • 4-5 medium-sized eggs
  • 2 cups of minced meat beef or pork
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of smoked paprika
  • 1 teaspoon of cumin
  • pinch of salt and pepper

Instructions
 

  • Cut the tomatoes in half.
  • Place the minced meat and tomatoes face down on a lightly oiled pan and let them cook for 8-10 minutes.
  • Add in the garlic and spices and cook an additional minute.
  • With a large spatula, break down tomatoes and mix everything around a bit for another minute or two.
  • Make small holes among the tomatoes and minced meat, and crack open the eggs on top.
  • Sprinkle the parsley on top.
  • Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
  • Serve while warm.

How to store it?

This minced meat shakshuka can be prepared at least a day or so in advance, and heated up before serving.

I recommend letting it cool and keeping it in an air-tight container, before putting it in the fridge.
