Ingredients
- 3 medium-large zucchinis (courgettes)
- 5-6 slices of ham
- 3 tablespoons of parmesan cheese
- 1 cup of shredded cheese emmental, cheddar, etc.
- pinch of salt and pepper
Instructions
- Wash and cut the zucchinis into thin slices.
- Sprinkle the zucchinis with salt and pepper.
- Chop the ham into small pieces.
- Add the sliced zucchinis, ham and shredded into the baking dish in layers.
- Preheat the oven at 430°F (220°C).
- Sprinkle the pan with parmesan cheese.
- Place in the oven for around 45 minutes until the top layer looks golden brown.
- Serve while warm.

How to store it?
The zucchinis will retain water, so I don’t recommend preparing this ham and zucchini bake too much in advance.
I have kept it overnight in the fridge, but that is about the extent of it. Pop it back in the oven for 10 minutes at 380°F (190°C) to heat it back up.
