Main ingredients:

PorkPork belly – fresh boneless pork belly (as opposed to frozen or smoked)
gyrosGyro pitas – greek style gyros or pitas
SpinachSpinach – fresh spinach or baby spinach
Garlic powderGarlic powder or flakes
ThymeFresh or dried thyme
ParsleyFresh or dried parsley
cayenne pepper(Optional) Cayenne pepper – for a bit of spice
Salt and pepperPinch of salt and pepper

Accents for the sauce:

CreamGreek yogurt – regular or low fat greek yogurt. You can also use sour cream if you wish.
ricottaRicotta – to add a bit of thickness to the sauce
Garlic powderGarlic powder or flakes
paprikaPaprika – for a hint of spice
lemonLemon juice – freshly squeezed lemon juice for flavor

Pork belly is one of the most delicious cuts of meat that you can indulge in, and itโ€™s very easy to prepare as well. If you are looking for an appetizer or snack, or even a light meal, you are going to love these pork belly bites that are presented on a gyro with a garlic sauce to bring out all the flavors.

It is crunchy and tangy, as well as being savory without being overly fatty.

In this case, I’ve cooked the pork belly in a fry pan on the stove, but I have also made it in the oven or in the air fryer on occasion. The goal is to get the pork belly crispy on the outside while remaining juicy and tender on the inside.

Ingredients
  

  • 6-8 strips of pork belly
  • 4-6 gyro pitas
  • 1 cup of fresh spinach
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • 1 teaspoon of cayenne pepper (optional)
  • pinch of salt and pepper to taste

Garlic white sauce

  • 1 cup of greek yogurt
  • 2 tablespoons of ricotta
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1 tablespoon of lemon juice
  • pinch of salt and pepper

Instructions
 

  • In a large mixing bowl, mix the spices for the pork belly rub together (salt, pepper, garlic, thyme, parsley, etc).
  • Add the pork belly into the bowl and cover each one generously with the spice mixture.
  • On a frying pan, cook each strip of pork belly at high heat for 5-7 minutes until golden brown.
  • In a small mixing bowl, mix all the ingredients for the garlic white sauce.
  • Heat a gyro for 30 seconds in the microwave or 1-2 minutes on stove top.
  • Place the gyro on a serving plate and top with the garlic sauce and a couple of leaves of spinach.
  • Top the gyro with the strop of pork belly and cut diagonally into bite-size pieces.
  • Repeat for each of the gyros.
  • Serve while warm.

How to store it?

These pork belly bites can easily be prepared in advance, however I would strongly suggest keeping the pork belly bites separately from the sauce and the gyros.

Keep everything in glass containers until ready to assemble. When ready to eat, heat the pork belly bites and gyros quickly in the microwave, and then assemble them with the garlic sauce and spinach.
