Equipment
Ingredients
- 4 boneless pork loin chops about 6-8 oz each
- 1 cup chopped cherry tomatoes
- 1 cup chopped fresh mushrooms eg. white, cremini, etc.
- 1 cup chopped mozzarella cheese
- 1/2 cup chopped or grated cheddar cheese
Herbs and spices
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon of dried basil
- 1-2 sprigs of fresh parsley
- 1 teaspoon of cayenne pepper (optional)
- pinch of salt and pepper
Instructions
- Preheat oven to 400°F (200°C) degrees.
- Combine the garlic powder, paprika, salt, pepper, basil, and cayenne in a small bowl and stir well to combine.
- Brush the spice mixture over both sides of the pork chops.
- Bake for 20 minutes until the pork chops look slightly brown.
- Chop the mushrooms, cherry tomatoes, cheeses, and the parsley.
- Take out of the oven and add the chopped mushrooms and cherry tomatoes into the same tray.
- Toss the mushrooms lightly so that the sauces from the pork cover the mushrooms.
- Add the cheese on top of the pork chops
- Place back in the oven and cook for another 10-15 minutes until the pork looks done. (This will depend on the thickness of the pork chops.)
- Take out of the oven and let rest 5 minutes.
- Serve while warm.

How to store it?
Unfortunately the cheese will dry out if you try to store it cooked. I suggest cooking the pork chops and veggies separately without the cheese and then cooking the cheese on top when ready to serve.
Keep everything in airtight glass containers until ready to eat, so that it doesn’t dry out.
