tomato coulisTomato coulis or crushed tomatoes
Garlic powderCrushed garlic cloves or garlic powder
OreganoDried oregano
ThymeThyme – fresh or dried thyme for that earthy flavor
BasilFresh or dried basil
Salt and pepperPinch of salt and pepper

Ingredients
  

  • 200 g of ravioli
  • 2-3 sausages, chopped
  • 4 tablespoons of grated parmesan
  • pinch of salt and pepper

Tomato sauce

  • 3/4 cup of tomato coulis or crushed tomatoes
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of garlic powder
  • pinch of salt and pepper

Instructions
 

  • In a large pot on the stove, cook the ravioli pasta according to package instructions.
  • In a small mixing bowl, mix all the tomato sauce ingredients.
  • Chop the sausages and in a large sauce pan, lightly cook the sausages at medium heat.
  • Mix the cooked sausages with the tomato sauce, and pinch of salt and pepper.
  • Once the ravioli has finished cooking, drain the ravioli and add it to the tomato sauce and sausages and stir for 1-2 minutes.
  • Plate the ravioli and add a sprinkling of shredded cheese. Serve while warm.

What to serve with it?

This ravioli in sausage and tomato sauce can be served by itself. But why not consider a spinach caesar salad or apple feta salad with red onion. You can also serve it with a starter like Instant pot carrot and potato soup.

How to store it?

If you wish keep this sausage and tomato ravioli in the fridge, it is best to keep the ravioli and the sauce separately. Cooked ravioli is best when it is dry, as it looses its texture and becomes mushy in the liquid is added.

Cook each separately and let them cool, and then store the ravioli and the sausage and tomato sauce separately in an airtight glass jar.

You can however prepare a large batch of the tomato sauce to freeze. Place the sauce in small single-use containers in the freezer, as it will spoil if you try to unfreeze and refreeze it.
