Ingredients
  

  • 20 oz of gnocchi (600 g)
  • 1/2 cup of grated parmesan
  • 1 tablespoon of butter
  • 1 cup of heavy cream
  • 2 cups of low sodium chicken or vegetable stock
  • 1 tablespoon of garlic powder
  • 1 teaspoon of dried parsley
  • pinch of salt and pepper

Instructions
 

  • In a pot or skillet, heat the chicken stock.
  • Once hot, add the gnocchi and cook for 3-4 minutes on medium heat until cooked.
  • Put aside 1/4 cup of the starchy cooking water, and drain the rest of the gnocchi.
  • In the skillet on medium heat, add the butter and fry the gnocchi for 2-3 minutes until golden brown.
  • Add back the starchy cooking water, along with the cream, parmesan cheese and spices and cook for another 5 minutes until thickened.
  • Serve while warm.

How to store it?

If you wish keep this creamy gnocchi in the fridge, it is best to keep the gnocchi and sauce separately. Cooked gnocchi is best when it is dry, as it looses its texture and becomes mushy in the liquid is added.

Cook each separately and let them cool, and then store the gnocchi and sauce separately in an airtight glass jars.
