How to make this Sausage and Coconut rice in the Instant Pot
- Chop the onions and tomatoes.
- Cut the sausages into 1-inch chunks. (If frozen, cook them whole and chop after pressure cooking.)
- Sauté the olive oil, onions, and crushed garlic in the Instant Pot for a couple of minutes until fragrant, then add the sausage and cook briefly.
- Add the remaining ingredients (except the coconut milk), then seal the lid.
- Cook on Manual/High Pressure for 5 minutes.
- Quick release the steam once the timer ends.
- Stir in the coconut milk and let it absorb into the sausage and rice for about 5 minutes.
- Serve warm.
